Sweet Chili Grilled Pork Chops Stuffed with Goat Cheese, Cherries and Basil
2 1-inch thick boneless, butterflied pork chops
1 300g log goat cheese
20 cherries, pits removed, chopped
handful of fresh basil leaves, chopped
1 Tbsp Billy Bee Honey
- Preheat BBQ
- Lay pork chops between two layers of plastic wrap – using a rubber mallet or a wooden rolling pin, pound each chop flat starting in the center – the goal is to flatten the meat not pulverize it so you don't have to smash too hard
- In a bowl, with a fork, mix goat cheese, chopped cherries, chopped basil, Thai Kitchen Premium Fish Sauce, Billy Bee Honey and Thai Kitchen Roasted Red Chili Paste - divide goat cheese mixture evenly on top of each flattened chop – roll chops and tie with twine
- Brush each chop liberally with Thai Kitchen Sweet Red Chili Sauce - grill until the thickest part of each chop reaches an internal temperature of 160º
Pounding out the pork chops between two layers of plastic wrap - remember you want to flatten, not pulverize.
Fish sauce is a wonderful substitute for salt!
Divide goat cheese mixture evenly between chops.
Roll and tie with kitchen twine. I also tied along the length of the chops to help keep the goat cheese inside.
Brush liberally with Thai Kitchen Sweet Chili Sauce and grill until thickest part of chop reads 160º on a meat thermometer.
