Savoury Crackers with Rosemary, Roasted Garlic and Goat Cheese

1/2 C flour + extra for rolling

1/4 tsp salt

1 sprig fresh rosemary, chopped

1/4 C butter

2 Tbsp goat cheese

6 cloves roasted garlic

2-3 tsp ice water

- preheat oven to 350ΒΊ - line a baking sheet with parchment

- in a food processor, pulse flour, salt and chopped rosemary until well combined

- break up butter, goat cheese and cloves of roasted garlic with your fingers and add all pieces to flour mix (room temp butter is fine) - pulse until mixture is coarse and crumbly

- with food processor running, add ice water by the teaspoon until the mixture forms a ball of dough

- sprinkle counter with flour - remove dough from processor and place on flour dusted counter - dust top of dough with more flour - roll, with a pin, to about 1/4 inch thickness - cut into desired shapes - place shapes on parchment lined sheet - gather dough scraps together, re-roll and cut into shapes - repeat until all dough is used up

- bake dough cut-outs 16-18 minutes until golden*** - serve alone or with your favourite dip

***baking time will depend on the size and thickness of your cut-outs - start watching them at around 12 minutes and keep your eye on them - the crackers in the picture above were cut with a 1-inch round scalloped biscuit cutter and took 18 minutes to bake
