Sabatier Canada : Breakfast Risotto

Like an Italian spin on Shakshuka, I made bacon and onion risotto with copious splashes of gorgeous Dolin Dry Vermouth de Chambery (from Bishop's Cellar) in a cast iron skillet, then I cracked a few eggs on top and finished it off in the oven with a sprinkle of chopped fresh thyme.

I really wish I had some right now.
