Simple Breakfast with Eggs and Avocado

The work of an entrepreneur never stops.

A simple breakfast with eggs and avocado is a necessity wouldn't you agree?

Being an entrepreneur, and also the parent of a toddler, means working and educating myself constantly to improve my business, all the while, a tiny human clinging to my legs droning, "Mama, Mama, Mama, Mama" endlessly, like a skipping record. Let's get realwho ACTUALLY has time to eat?! 

It's so easy to get wrapped up in the mindset of being "too busy", and sadly, the concept of eating for pleasure often gets pushed to the wayside or forgotten completely.

When you have a few hours to yourself, regardless if you have children or not, you KNOW you should be taking care of yourself. Eating is such an important factor in self-care, however, it's a hard lesson to prioritize, when you have a business, or a child, or both.


There is always someone or something else that needs your attention.

If you don't put yourself first, who will?

I'm not talking about putting yourself first and forgetting about everyone else.

No, no.

I'm talking about striking a balance between giving and taking.

WE GIVE our thoughts, our time, our emotions, our sweat, our tears, and sometimes our sanity, to our businesses and our families.

WE HAVE TO TAKE a deep breath, take ourselves out for coffee, take an extra long hot shower, take a walk, take time to make a simple breakfast and eat it in peace.

Something like eggs on avocado toast, a hot cup of tea, and a couple of clementines can work wonders (even if you're working on your social media as you eat).

Take those moments and enjoy every damn second.

Simple Breakfast with Eggs and Avocado

This "recipe' is so dead simple I wouldn't even call it a recipe. It's just damn good is all.

Serves one

1 egg

1 avocado

Juice of half a lime

coarse sea salt, to taste

cumin, to taste

1 slice of your favourite bread

2 slices of Brie


  • Bring a small pot of water to a boil. Gently ease in the egg and cook for eight minutes. Remove egg from pot and run under cold water. Gently crack egg on counter, remove shell, and slice in half lengthwise.
  • Peel avocado and, with a fork, mash with lime juice, sea salt, and cumin. Adjust salt and cumin until the taste suits your preference.
  • Toast your bread and top with mashed avocado, slices of Brie, two egg halves, a light sprinkle of sea salt and cumin, and shoots.
  • Drink with a large pot of tea while cruising social media and enjoying some peace and quiet.
