Easy Minestrone Soup Recipe

After a month of practically living on shortbread cookies, Quality Street chocolates, and BBQ chips, I decided it was TIME TO EAT SOME VEGETABLES and a quick, easy minestrone soup recipe fit that bill quite nicely. The beauty of this recipe is, although it’s vegan and vegetarian, you can use chicken stock if you like. Also, feel free to change up the vegetables, or substitute lentils or beans for the chickpeas. I added rice to this batch to keep it gluten-free for a friend, but you could also cook up some macaroni, small pasta shells, or even gnocchi for extra heartiness. Just be sure to add cooked rice or pasta to each individual serving bowl rather than letting it sit and get soggy in the pot. If you’re a meat eater you could add shredded chicken or mini meatballs, and although the recipe is dairy free, I actually like to top mine with a little grated Parmesan. The options to modify the minestrone are pretty endless - just think of it as a starting point!

Easy Minestrone Soup
A simple and easy minestrone soup recipe made with canned crushed tomatoes, potatoes, carrots, and chickpeas.
Ingredients
  • 1 medium onion, diced
  • 1 garlic clove, minced
  • One 28-ounce can crushed tomatoes
  • 5 cups water
  • 2 medium potatoes, chopped, skin on
  • 2 carrots, diced
  • 2 bay leaves
  • 19-ounce can chickpeas, drained, rinsed
  • salt and pepper to taste
  • *optional - 1 cup broccoli florets
  • *optional - cooked rice or pasta
Instructions
Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add onion and garlic and cook, stirring often, until onion begins to brown.Add crushed tomatoes, water, potatoes, carrots, and bay leaves to pot. Raise heat to medium-high, bring to a boil, then cover, and reduce heat. Simmer soup for 20 minutes with lid on.Add chickpeas to pot and continue to simmer 10 minutes more. Season to taste with salt and pepper.Add broccoli florets and cooked rice or cooked pasta to the bottom of a soup bowl. Ladle hot minestrone into bowl and serve.
