I made this Vegan Berry and Plum Galette with Vanilla Spelt Crust last week using this recipe by Alexandra Daum over on Baked - the blog. Alex's recipe calls for peaches but I found gorgeous tiny yellow plums at our local market, and I picked fresh blackberries at the lake near my house. I also added fresh cherries and raspberries I had in the fridge.
I can't say enough good things about this galette! The crust was crisp and flavourful with a hint of flavour from the coconut oil, and the filling was juicy and tart. If you make it, my main advice would be to roll out your crust quite thin. What I thought was too thin turned out to be perfect both for size to hold in the fruit, and texture once baked. It's a fantastic way to get your fix of all the late summer fruit!
