Rhubarb Simple Syrup Recipe
2 cups rhubarb, chopped small
1 cup sugar
1 cup water
Bring rhubarb, sugar, and water to a boil. Reduce heat and simmer on low for 23-25 minutes. Strain rhubarb, with syrup, through a fine mesh strainer into a heatproof vessel. Use syrup in cocktails, over ice cream, stirred into yogurt, or anything else you like. Reserve cooked rhubarb for same uses - stirred into yogurt, on top of ice cream, with scones, or anything else you fancy.
Note : I made this rhubarb simple syrup recipe and combined it with gin and sparkling water to make a refreshing and pretty spring-inspired cocktail.
