Citrus, Shrimp, and Quinoa Salad

Shrimp and quinoa, with a burst of flavour from citrus, olives, and feta cheese, can add zest and zing to your desk lunch. In this recipe, feel free to substitute tofu, steak, or chicken for the shrimp.

My new friend Aimée and I recently got together for a fun lunch photo shoot including this recipe for Citrus, Shrimp, and Quinoa Salad with Feta from Allison Day’s new cookbook Modern Lunch. I already own Whole Bowls, Allison’s first cookbook, and love it, and I was recently sent a copy of Modern Lunch, so when Aimée suggested shooting one of Allison’s recipes I was in! So far have tried the Turkish Poached Eggs, Savory Vegetable Cobbler (which we loved - homemade biscuits baked on top!), and the Citrus, Shrimp, and Quinoa Salad with Feta (which Aimée made and styled).
