A gorgeous pink syrup which will elevate basic cocktails and mocktails.

Bring rhubarb, sugar, and water to a boil. Reduce heat and simmer on low for 23-25 minutes.
Strain rhubarb through a fine mesh strainer into a heatproof vessel. Reserve solids.
Use syrup in cocktails, over ice cream, stirred into yogurt, or anything else you like. Reserve rhubarb solids for same uses - stirred into yogurt, on top of ice cream, with scones, or anything else you fancy.
