Ingredients

  • 1 cup sugar
  • 1/2 cup lilac blossoms removed from stem, gently shaken to loosen dirt or insects

Instructions

  • Combine sugar and lilac blossoms in a jar. Seal the lid and give the jar a shake. Shake once per day for a week or so.
  • Using a fine mesh strainer, sift the lilac blossoms out of the sugar. Store your sugar in a jar and use anywhere you would use regular sugar.

Notes

The moisture in the flowers will make the sugar clump during the week. Don't worry, just continue to shake every day to infuse the lilac flavour.
One of your favourite uses for lilac sugar is in lilac whipped cream on top of cider-poached rhubarb pavlova.
